High-pressure pasteurization at 4000 bar

 
 

Pasteurization under high pressure drastically reduces the thermal load on foodstuffs while leaving valuable ingredients such as vitamins, natural colors and aromas unchanged. In contrast to conventional high-pressure processes where the pressure is transfered to the foodstuff using a transfer medium and plastic container, Hammelmann technology allows for the direct compression of liquid foodstuffs. As a result, high production volumes can also be pasteurized at minimal cost. Moreover, the texture of the foodstuff can also be influenced specifically, meaning new products with changed product characteristics are possible.

High-pressure pasteurization

High-pressure valve

The high-pressure valve reduces the pressure and subjects the fluid to high shear forces, which destroys microorganisms and significantly increases the shelf life of the product. The foodstuff is homogenized and pasteurized in a single pass.

Depending on the operating pressure, the temperature on the outlet of the valve is significantly higher than the intake temperature. As a result, upstream or downstream cooling of the pumped medium may be necessary.

 
 

CIP 1

Two cleaning cycles are carried out for each cleaning agent for complete flushing of all areas inside the high-pressure pump.

In the first cycle, the cleaning system is connected to both the suction opening and flushing opening. In order to reach all areas, the pump must be operated continuously at high pressure and full operating speed during this phase.

 
 

CIP 2

In the second cleaning cycle, backwashing is made from the
cleaning opening to the suction opening of the pump. 

The pump is not operated during this cycle.

 
 
 
 
 

Process pumps for the food industry

The process pump is equipped with a fluid end that has been specially developed for use in the food industry yet is still based on established Hammelmann high-pressure technology. All components that come in contact with fluid are FDA-certified and approved for use in food processing. The high-pressure seal is established based on the patented Hammelmann seal system with metallic sealing bushes and tungsten carbide pistons, which minimizes the risk of food contamination caused by worn seals.
